ROAST PROFILE

City Roast (Medium) develops a complex cup with green apple & orange-like acidity. Caramel & honey round up the cup. The finish is dry with a touch of nut flavor.

It is said that a cup of Chiapas coffee can rival the powerful flavor and complexity of a much finer Guatemalan coffee.

Full City (Dark) roasts develop layers of dark toffee sweetness and plum jamminess. Chocolate notes are enhanced as citrus flavors become more muted.

This high-grown, organic Mexico coffee shows off a brisk citrus acidity, a delicate body and a very pleasant dryness – like that of a fine white wine.

The cup is clean and well balanced with light nut and fruit notes.

Our organic Mexican coffee is farmed on the Las Vergel Estate that sits along the mountainous highlands in Chiapas. Here, coffee trees grow under a natural forest canopy that provides essential organic nutrients & shade.
